Each spring in the Idaho valley once named Day’s Defile, snowcaps melt, feeding the lost rivers that eventually disappear under porous volcanic basalt. The water is filtered through subterranean tributaries that meet the Snake River Aquifer, water we depend on to make our whiskey.
